Rainbow Soba Salad

METHOD
Prepare the veg by thinly slicing the carrot, cabbage and capsicum. Defrost edamame and corn.
Cook noodles according to instructions.
Make dressing by adding ingredients into a jug and whisking with a fork.
Drain noodles and add to a mixing bowl with the veggies and cashews.
Divide between bowls and drizzle over dressing then garnish with coriander.
