This week at the winery we found our Cheif Winemaker Natalie Christensen roaming around our wine cellar sniffing barrels.
Once wine is emptied out of barrels, we fill them with a citric sulfur solution in order to preserve the barrel & keep it sound for it's next use. Now that we have grapes coming into the winery, we need to prepare our barrels so that they can be filled with wine. The citric sulfur solution is emptied out and the barrel is washed thoroughly by one of our cellar hands. Nat is sniffing all of the barrels to make sure there is no traces of sulfur left and to give the team the all good to fill the barrel back up with wine.
