The certified Organic fruit from the I2 block was de-stemmed, chilled and gently pressed. The juice was cold settled for 72 hours, after which the clear juice was racked off. A long, cool fermentation using specialist Sauvignon Blanc yeast followed, helping to capture and enhance the distinctive fruit flavours from the Organic block. Once fermentation was complete, the wine was racked, stabilized and filtered before bottling.

At Yealands, we aim to leave the land better than we found it. We achieve this through a wide range of initiatives and on-going projects including developing wetlands, making our own special compost and using natural pest control measures in our vineyard.
