The Riesling blocks were harvested separately over 5 days from our Seaview Vineyard. The fruit was pressed gently, separating the free run juice from the pressings into stainless steel tanks. After settling for 72 hours, the clear juice was racked off. They were inoculated with carefully selected yeast strains to capture and enhance the aromatic Riesling flavors. Once fermentation was completed, the wine was racked, blended, stabilized and filtered prior to bottling.
