This week in the winery our winemakers completed their first round of Sauvignon Blanc grading!
Grading is the first step our winemaking team completes to start the blending process. When our grape juice comes into the winery, we put all of the juice from the same vineyard block into one tank to try and isolate unique flavors a particular vineyard site might produce. Now that our grape juice has fermented into wine, our winemakers will taste all of the different tanks of Sauvignon Blanc blind, and give it a score from 1 to 10. They will then go on to decide which wines or tanks get blended to provide the perfect balance of flavors.
On this first day of grading, our winemakers worked through the Sauvignon Blancs from the Wairau Valley, and the Upper Awatere Valley. Eventually, all of our wines across all varietals will go through the process of grading.
