This week in the winery our wines are being put into barrels to start aging.
The picture below is of our new french oak barrels that will be holding some of our Pinot Noir. Oak barrels are used to vary the flavour, texture, and tannin profile in a wine. They can help to make a wine less astringent and smoother on the palate.
These wines will rest for around 9 months until our winemakers decide they've developed the perfect flavour profile and send them off to the bottling line.
