Now that we've started our harvest in the vineyard, our winery team has been busy processing fruit!
The grapes first stop at the winery is our press & receival area. The grapes get transferred from the vineyard to the winery in either trucks or bins. The fruit from there gets dumped into receival bins which connects to our presses. A press is a big cylinder that has a bladder inside that fills and contracts with air.This presses the grapes against the sides of the press and releases the juice from the grape skins.
The juice then runs through a few filters to try and separate the juice from any skins, stems, or seeds before getting connected and pumped into a fermentation tank
